Spring Beet Salad

Recipe

Ingredients: 

 

1 Beets (large)

2 Orange (1 juiced and 1 segmented)

1 Lime (juiced)

1C Spinach

1 T Balsamic vinegar

½ T Dijon mustard

TT Salt & Pepper

1 Garlic Clove (minced)

 

Method of Preparation:

 

  1. Cut the tops off the beets. Place the beets in a large pot and cover with 2″ of water. Bring to a boil then reduce to low and cook for 45 minutes.

  2. Set the beets aside and allow to cool.

  3. Peel the beets once they are cool to the touch.

  4. Cut the beets into 1″ pieces.

  5. In a small mixing bowl add the orange juice, lime juice, balsamic, vinegar, honey, and dijon mustard.

  6. Whisk vigorously until the ingredients have combined.

  7. Add the chopped garlic and salt. Whisk and incorporate.

  8. Taste the dressing and add salt to taste if needed.

  9. Set Aside.

  10. Lightly dress spinachwith vinaigrette dressing.

  11. Serve slightly chilled.
